Green curry paste

Green curry paste is available at the market but I highly recommend you to prepare it by yourself at home; it's frequent that the paste you can buy is "rough" and really far from being smooth.


Ingredients for 1 set.

From 5 to 10 chili leaves or other green leaves

1 or 2 pcs fresh green or red chili

1 clove garlic

1 tbsp galangal

4 pcs kaffir lime leaves

1 pcs shallots

1 tbs white pepper corn

1 pcs coriander roots

1 pcs lemongrass

1/4 tbsp shrimp paste.



Preparation:

After having carefully washed all the ingredients, cut them all into very small pieces and chop the leaves. Place one ingredient at a time into the mortar until you obtain a fine, creamy, smooth paste.

Order of ingredients: white pepper corn - lemongrass - galangal - kaffir lime leaves - coriander root - chili - garlic - shallot - shrimp paste.

For the green color: put the chili leaves in the mortar (separately) after chopping them and add 3 tablespoon of water, then crush everything and filter the mixture obtained through a chinoise.
